Dinner in 30: Chicken and Dumplings *Mama Style*

Most days I have to remind myself what day of the week it is. If you are like me, this time of year my "To Do List" is growing by the minute. Somethings I can put off, but a good home cooked meal is one thing that cannot wait. So today I am sharing an easy 30 min dinner, Chicken & Dumplings (mama style). I call it mama style because, unlike your granny, mama may not always have all the time in the world to be making things from scratch, but that doesn't mean it'll lack flavor and can't make you feel at home. Check out the recipe, make it and let me know how you like it.




Ingredients:

  • Shredded Rotisserie Chicken

  • one cup of chopped carrots

  • one cup of chopped celery

  • garlic powder

  • cajun seasoning

  • onion powder

  • One can of Pillsbury flaky layers biscuits

  • Flour (self-rising or plain, doesn’t matter)

  • Chicken broth

  • Cream of chicken soup


Directions:

  1. First, sauté some diced carrots, onions, and celery in some butter. Tip: use the rib AND the leaves from the celery, if you have them. The leaves are packed with flavor!

  2. Next, season your veggies. I like to use cajun seasoning, paprika, onion powder and garlic.

  3. Then, add some chicken stock and your shredded rotisserie chicken and bring to a boil.

  4. While the soup is coming to a boil, open your can of flaky biscuits, flatten them out and cut into fourths then eighths.

  5. Sprinkle the dumpling dough squares with flour.

  6. Once the soup comes to a boil, add your can of mushroom soup and the dumpling dough to the broth, cover the pot, and simmer for 15 minutes.

Done! That easy!
